Today I am sharing with you a recipe that I grew up with and have made countless of times. I got it from my mother and it has always been a classic in our household through Fall.
It’s an apple cake with a cinnamon almond crumble topping that is packed with fall flavours and easy to make.
The crust is a simple shortcrust pastry made with spelt flour, coconut blossom sugar and vegan butter. You can also make it with all-purpose flour or whole grain flour and you can use any kind of sugar you like. My mother’s recipe also calls for an egg, but guess what? It is totally NOT necessary! I just added 2 tablespoons of water to make the dough less dry and it came out perfectly. After preparing the crust, you will have to peel, core and slice quite a lot of apples. It is easy work, but I think I needed 25 minutes just for that. Once that is done, the rest will only take you a few more minutes. All you still need to do is mix the ingredients for the crumble and scatter them over the apples.
The crumble is made with ground almonds and cinnamon because apples and cinnamon are a marriage made in heaven. This cake will fill your house with the most amazing aroma and let me assure you: it is so, so good. And if you want to do it like we do, enjoy it still warm with vanilla sauce, whipped cream or vanilla ice cream!
Apple cinnamon almond crumble pie
- 250 g spelt flour
- 125 g vegan butter
- 75 g coconut blossom sugar or any other kind of sugar
- 2 tablespoons water
- 5-6 medium sized apples
- 40 g ground almonds
- 40 g vegan butter
- 40 g coconut blossom sugar
- 1/2 teaspoon cinnamon
Preheat your oven to 200 degrees Celcius and lightly grease a tarte dish (9 to 10").
For the crust, combine all ingredients in a big bowl and knead them to a firm dough. Redfridgerate it while preparing the filling.
Wash, peel and core the apples. Then cut them into thick slices.
For the cinnamon almond crumbles, mix ground almonds, vegan butter, coconut blossom sugar and cinnamon with your hands.
Now, roll out the dough in the tarte dish and press it up the edges with your fingers.
Place the apples on top of the crust in any pattern you wish. Then, evenly spread the cinnamon-almond crumble mixture on top of the apples.
Bake in the oven for 40-45 minutes.
Serve it still warm or cooled down with whipped cream, vanilla ice cream or vanilla sauce.
