This might just be the BEST banana bread I’ve ever made.
I mean, just look at it..
Doesn’t it just look perfect?
I know, I know, “A man’s praise in his own mouth stinks”. But I am really proud of this one. From all the banana breads I’ve ever baked – and I have baked a lot – this one definitely ranks first. It is perfectly soft and fluffy while also being moist, sweet and delicious. And chocolatey, of course.
It only takes a few minutes to prepare the batter: Mash bananas, melt coconut oil. Mix them with maple syrup, plant milk and coconut blossom sugar. Combine the dry ingredients seperately before mixing them with the wet ones. And not to forget, add in some dark chocolate chips. Then, into the oven it goes.
I baked this banana bread for literally 75 minutes (maybe even 80..). They usually take long to bake, but that long? I have been thinking for a while that – after more than 25 years – our oven might have lost the power it used to have as there have been other things that took a really long time to bake. My mother doesn’t think so, though. And this banana bread was quite a big one.. If you make this, definitely test it with a skewer after 60 minutes. But if it doesn’t come out clean, know that it’s (probably) normal and just bake it for about 15 more minutes.
Most of the time I eat banana bread plain but it is even better topped with some peanut (or other nut) butter and sliced banana. Paired with a coffee, this was the perfect afternoon treat and would make for a nice breakfast, too!

Double Chocolate Banana Bread
- 3 ripe bananas, mashed
- 1 cup plant milk
- 1/3 cup maple syrup
- 2 tablespoons coconut oil, melted
- 1/2 cup coconut blossom sugar
- 1 + 1/3 cup flour, spelt
- 1/2 cup cacao powder
- 1/2 teaspoon baking powder
- 1 teaspoon baking soda
- 1 handful dark chocolate chips
Preheat your oven to 180 degrees Celcius and line a loaf pan with baking paper.
In a big bowl, mix together mashed bananas, plant milk, maple syrup, melted coconut oil and coconut blossom sugar.
Combine the other ingredients in a seperate bowl.
Add the dry ingredients to the wet ones and combine them with a fork. Fold in dark chocolate chips at last.
Pour the batter into the loaf pan. Top with a sliced banana if you want.
Bake for 60-75 minutes (test with a skewer!) and let it cool down in the pan.
