This is a variation of my Bircher Muesli recipe that I posted a few weeks ago. If you’ve never had Bircher Muesli before and you’re curious what is is and where it originates from, I have talked about that in the basic recipe.
It has been one of my favourite things to eat in the mornings this summer. Mainly because you eat it cold which is perfect during this heatwave. But it’s also super delicious, wholesome, healthy and satiating, too.
To make it even more nutritious, I added some of my favourite ‘superfoods’ this time. At this point, I want to make clear that I do not believe that any of them are necessary for a healthy diet. A balanced diet containing fresh fruit, veggies, nuts, seeds and whole grains is sufficient. Personally, I like to include them into my every day diet, not only for an extra health-boost but also because I simply really enjoy their taste.
The muesli contains:
- Chia seeds
- Wheatgrass powder
- Goji berries
- Maca powder
- Coconut yogurt
- Mulberries (my fave)
- Cacao nibs
- Hemp seeds and hemp butter
Each of them has a very high nutritional value and is packed with different vitamins, minerals, antixodiants and healthy fats. If you want to find out read more about each superfood and its health benefits, this website has articles covering all of them.
But not only those superfoods are great for your health – fresh local berries, walnuts and almonds are, too!
Here is the full recipe:
'Superfood' Bircher Muesli
- 1/2 grated apple
- 75 g rolled oats
- 1 tablespoon chia seeds
- 1 tablespoon chopped almonds
- 1 tablespoon chopped walnuts
- 1 tablespoon goji berries
- 1 tablespoon maple syrup or other sweetener
- 1 teaspoon lemon juice
- 1 teaspoon wheatgrass powder
- 1 teaspoon maca powder
- 100 g coconut yogurt
- 125 ml plant milk
- 125 ml water
- 1 pinch of cinnamon (optional)
- 1 teaspoon psyllium husks (optional)
- hemp seeds, mulberries, cacao nibs, hemp butter
- fresh berries, banana, chopped nuts
Combine all ingredients in a bowl. Cover and place in the fridge overnight.
In the morning, add toppings and dig in!
